Ingredients
– 2 tsp instant yeast
– 1 1/2 cups of warm water
– 1/2 cup sourdough discard
– 2 tbsp sugar(or honey)
– 2 tsp salt
– 4 cups of flour(all purpose will work)
Water bath:
– 1 tbsp sugar
– 1 tbsp baking soda
Instructions
- Whisk warm water and yeast in your stand mixer and let it sit for 5 min
- Add the rest of the dough ingredients, except the flour and salt, and mix well.
- Then add in 2 cups of flour and knead it with your dough hook for about 2 minutes.
- Let this mix sit for 15 minutes
- Next add your salt and the rest of the flour. Mix it well with the dough hook for 5-10 min.
- Transfer dough to a glass or ceramic bowl(coated with oil so your dough doesn’t stick). Cover and let it sit for 1-2 hours. It should double in size.
- Remove the dough from the bowl to a floured surface and divide into 8-12 pieces(depending on how big of bagels you want. Remember they will get bigger).
- Form into balls and then poke a hole in the center with your thumb. Roll in your hands to form a bagel shape. Make the holes bigger than you think because they will shrink when the bagels expand.
- Set them aside and get about 10 cups of water boiling. Once boiling, add your sugar and baking soda.
- Pre-heat the oven to 425.
- Once your water is boiling, drop 2-3 bagels in at a time, allowing to boil 30sec-1 min on each side.
- Once you’re finished boiling, cover with egg wash and use toppings of your choice. I leave half plain and everything bagel seasoning for the others.
- Place in oven for 15-20 min.
