Bagels

Ingredients

– 2 tsp instant yeast
– 1 1/2 cups of warm water
– 1/2 cup sourdough discard 
– 2 tbsp sugar(or honey)
– 2 tsp salt
– 4 cups of flour(all purpose will work)

Water bath:
– 1 tbsp sugar
– 1 tbsp baking soda

Instructions

  1. Whisk warm water and yeast in your stand mixer and let it sit for 5 min 
  2. Add the rest of the dough ingredients, except the flour and salt, and mix well. 
  3. Then add in 2 cups of flour and knead it with your dough hook for about 2 minutes. 
  4. Let this mix sit for 15 minutes 
  5. Next add your salt and the rest of the flour. Mix it well with the dough hook for 5-10 min. 
  6. Transfer dough to a glass or ceramic bowl(coated with oil so your dough doesn’t stick). Cover and let it sit for 1-2 hours. It should double in size. 
  7. Remove the dough from the bowl to a floured surface and divide into 8-12 pieces(depending on how big of bagels you want. Remember they will get bigger). 
  8. Form into balls and then poke a hole in the center with your thumb. Roll in your hands to form a bagel shape. Make the holes bigger than you think because they will shrink when the bagels expand. 
  9. Set them aside and get about 10 cups of water boiling. Once boiling, add your sugar and baking soda. 
  10. Pre-heat the oven to 425. 
  11. Once your water is boiling, drop 2-3 bagels in at a time, allowing to boil 30sec-1 min on each side. 
  12. Once you’re finished boiling, cover with egg wash and use toppings of your choice. I leave half plain and everything bagel seasoning for the others. 
  13. Place in oven for 15-20 min. 
  14. Let cool & enjoy!🤗

It seems like a lot of steps, but once you do it you’ll see it’s pretty easy! And it’s so rewarding! Who doesn’t love a warm fresh bagel?😋
